I'm not sure I believe this is the case. I've only seen a handful of posts stating 'no animals were harmed', but I've found no posts at all claiming actual harm, so the existing evidence seems to be that innards and the like were products of 'humane' slaughter or special effects.

slaughtered pigs are seen in the first 30mins of the movie. the final 30mins are about a taxidermist, so naturally there's a lot of dead animals and taxidermy in his workshop, and we also see him actively working on them (skinning, etc)
