In the first season, George Sr. has a vision in the form of a Star of David, which he interprets as a sign from God. However, he’s not particularly interested in studying, to the annoyance of those around him. He plays on whatever Jewish thing he can think of, but none of them are harmful stereotypes. Mostly just getting out of conversations or duties by claiming it’s a holiday, or “the Sabbath”, even in the middle of the week. No anti-semitism, just that George Sr. is supposed to be lazy and inattentive at everything he does.

the entire character of rita from season 3 is a joke at the expense of mentally disabled people. throughout her first few episodes, her mannerisms are intentionally represented in a way meant to convince the audience that she's a secret agent, although it's fairly obvious from the start what her "big twist" is, being that she was disabled the whole time. various ableist hints at her disability include her attending a preschool called "slowbrooke", laughing loudly, wearing mismatched clothes, being called stupid by her uncle and the narrator, eating improperly, playing with dirt, frequent mentions that she doesn't "seem" disabled because she's attractive, and "r*t*rd" and "r*t*rded" are used multiple times after her "reveal". she's featured quite heavily between episodes 2-6 of season 3, so unfortunately if you want to avoid all the ableism, skipping these episodes might be necessary.
