one instance includes a man stalking a women to kill her (he succeeds) there are some gory deaths where women die with chainsaws (sexualized nurses) and one implied SA with a dead woman's body offscreen

No but there are notes about caretakers who treat little kids like experiments. There are children with visible scars on their bald heads, implying these experimentations.
Quite far in, when Leon goes to Raccoon City, you see a close-up of a normal-sized spider as he drives past the sign. Further along, you see lots of cobwebs right before you have to fight big (like mutated big) spiders. They’re unavoidable. You see them again in the subway later on.
Very graphic one when Grace gets attacked the first time, after picking up a metal pole. She'll also stab zombies in the eye if they grab her, in order to free herself.
Aside from knives being used on Zombies during gameplay, there’s a graphic scene of a woman being murdered by having a knife stabbed through her throat.
This seems to be yes and no. I’m not sure which kid people are saying yes about but the primary kid technically does NOT die but is shown graphically transforming and 100% appears to be taken out—by your own hand no less. There are implications of another monster having started out as a child as well. That monster dies but definitely does not resemble a child at this point and is never seen as a child either.
There’s also technically the situation with Kendo (addressed fully in flashbacks) but you are not shown any real outcomes there. Another child’s notes are found around town—given her plan to unite with her father (who we know is dead) and the death of her adult companion—it’s not looking great. So, more implied child death.
Depends on your sensitivity to implied deaths because it’s clear that many, many children died in RC anyway.

Like every Resi game since 6, this game loves its damn jump scares. There are honestly too many to list, and that’s even just account for the scripted and ones found in cutscenes; never mind incidental ones that happen throughout. That said, if (like me) you hate the jump scares, my advice to mitigate them is to play in third-person as they’re less in-your-face, and mute the game
Very early in the game, a police officer says something "stung" him, and shortly after he covers his mouth and spits out blood + a few teeth into his hand. He does not actually vomit like the other comments say, but the audio is definitely a bit of a gagging noise! There are lots of zombie-style gagging noises througout this whole action cutscene, so if you're watching a playthrough and want to skip, once Grace is looking down out the window/sitting by the window, you're good to unmute!! <3
When Grace wakes up she'll have a needle in her arm, drawing her blood. She's moving around a lot and later ripps it out, which is very uncomfortable to watch if you're sensitive to that.
Also the healing and steroids you can use she'll stab into her wrists, though you cannot see any needles there.
No BUT a lot of disabled kids are experimented on unethically in a medical setting that is like an asylum
One character who has an anxiety disorder and CPTSD is restrained on a medical bed against her will in a way that is similar to how some electroshock therapy patients have been restrained
Certain part of the game has its place in the mental health facility, where patients get influenced by an external factor and become agressive towards the player character(s).
Very big topic in this game. Never explicitly talked about it but there's distressing scenes and how the characters deal with those traumas. There's flashbacks and panic attacks

No, but Chunk is an (implied) toddler who got mutated into a large, giant fat humanoid creature. I'd say it kinda leans into the trope of fatness being used as an expression of the grotesque and seen as body horror
Some elements of the plot could read as blood libel conspiracies from a western point of view, but its clearly meant more as a criticism of inhumane scientific experiments with nothing indicating anybody involved with this is Jewish
Some imagery also seem to reference concentration camps, so something to keep in mind as it can be pretty disturbing
