While there is little blood, if you decide to go the cannibal route or generally slaughter a human corpse (Which you can do in-game) you can see items like "human leather" and also make trophies from human corpses. All of these have little graphical gore but is disturbing for some (Can be mostly avoided by just- not doing that)

Pets and farm animals can all die and be killed, either by wild animals or raiders. It's not gorey or bloody and the animals are extremely boring. To avoid animal death, you can sell any animal you get given to you to merchants
