A man in a military-like unit is regularly beaten and bullied. One of the people who does this to him winds up working for him, and he in turn bullies the man in some of the ways he was abused.
S1E2.. companion (dog) is stabbed by The Ghoul in Filly. It's not seen but you do hear it. It's when the dog attacks The Ghoul. You do later see the dog and its stab wound a couple of times in passing. Later The Ghoul heals the pup back to life.

In episode 4 around the 13-14 minute mark the main character bites off the ghouls finger and he subsequently cuts off hers. It’s done very slow and in a very graphic manner.
