There isn't a ton of actual blood but there are many nasty injuries. Frieza blasts several holes into different characters. Piccolo has his arm mangled and has to regenerate it. A fused character has half his body become disfigured. A character has a hole blasted in his chest and nearly dies.
The fight with the most actual on-screen blood is probably Hit vs Vegeta and then Hit vs Goku during the tournament between Universe 6 and 7. Vegeta wipes blood from his face, Hit wipes purple blood from his cheek, and Goku spits blood.
