Whether it's seen as joking about sexual assault on men is up to interpretation. For context, the man pulls a knife on Maxine and is going to attack her before she pulls out the gun. It seems to be less a mockery of men being sexually assaulted and more that the audience feels vindicated that the man planning to attack her is humiliated. Also, the scene where she steps on and punctures part of his body is just shocking, so that might have made some people laugh out of surprise.
