Episodes 2 and 3 are really hard to watch if you care about animals, there are multiple graphic things in them as well as some creepy stories. You can skip those when they start and you won't lose anything important to the story (the frog story is slightly important but honestly I would rather not hear it), but you will likely still see parts of them before you skip. Other than these 2 episodes, most of what you'll see in the other episodes is graphic meat images, and inner organs that are "human organs" story wise, but in reality are probably real animal organs that were used while filming (guts, hearts, etc). But it's not much worse than the average horror movie, other than episodes 2 and 3. The series is still worth watching in my opinion, but do be prepared to skip some scenes.

The human gore comes in waves. Sometimes it'll be a flashback of a severed limb, or the camera will show Dahmer's collection of polaroid's of his victims. The most prolonged scenes are of the head in the fridge, the hitchhiker (head wound, but you only really see blood in his hair), the guy in the nice hotel (this one was pretty rough), and Dahmer's beat down in the jail and the hospital scene that follows.

If you count Jeffrey cutting up the bodies as amputation, then yes. In Ep.1 you see a head in the fridge twice, once very briefly (11:21, for barely 2 seconds) and again later in the episode when the officers are explaining what they found to Jeff's father. The entire scene references body parts he kept in the cold storage (41:20-43:00). You see the head as they're taking crime scene photos (as well as human hearts, the vat of acid which clearly has bones, etc.). They describe their findings in detail, so if that's not your jam skip it.

You do see some scenes from the movie The Exorcist 3 during the first episode, but those are very minor and are only seen for a few seconds with barely any info about what's seen, so I would still count it as "not really".

A victim's mother seem to have what looks like an anxiety attack after losing her son. She is cutting his head out of every picture and cries terribly. It's somewhere between an anxiety attack to PTSD from the look of it. Earlier in the series there are also a few scenes that look like Dahmer's mother might be having some anxiety attack.

In the last few episodes we see people living with trauma, having nightmares, etc. They never get any professional treatment for it so it might not be an official PTSD, but they are clearly very traumatized and it looks like they have it.
