The ending of Season 1 is bittersweet, and even then, it's not confirmed if most of the POV characters are going to survive in the long term post-canon due to extraneous circumstances.
EDIT: 7 of the 16 POV characters are confirmed to survive to reunite in the sequel, several survive off-screen, one dies on-screen in the finale and another dies off-screen post-finale, and others have their fates unconfirmed.

In Season 2, the same character claims to have committed even more cannibalism off-screen, even allegedly eating the corpse of a character who died at the end of Season 1. This, however, is mostly a bit and has little overall impact on the storyline.
