Of animals you kill, some corpses (e.g dogs and small rats) don't despawn and just stay there

Apart from the spider-like Sewer Centipedes, which you meet in Irithyll of the Boreal Valley and Irithyll Dungeon, the Deep Accursed is a spider creature which jumps down on the player in order to ambush them. There's only two in the world (Cathedral of the Deep & Anor Londo), and they do NOT respawn. One is a lot more likely to get in the player's way in Anor Londo, as it lands at the entrance of the cathedral there, but the other is in an empty side room in the Cathedral of the Deep, so it's more missable.

The Irithyll Dungeon area features several items that trigger a loud scream when picked up.
One boss battle begins with the player transported into a dark cave. An item is conspicuously placed on the ground, but approaching it causes the boss's face (a gigantic skeleton) to be suddenly lit up.

(SPOILERS)
Yhorm The Giant's boss fight is most likely just an assisted suicide. On top of that, his friend Siegward is theorized to have killed himself after the fight too, but I believe he just succumbed to injury instead.

not in the content of the game, but the message/hint system includes the word 'fatty' and you may run into a message warning of 'beware fatty ahead' or something similar. these messages are left by other players and are not consistent, depending on if the writer is online or how recently they were online, and they don't show up in offline play.

There is a boss character who can be easily interpreted as a transgender woman, but regardless of if they are or aren't trans, the areas related to them are often littered with messages of 'beware trap ahead' or similarly poking fun at the misconceptions of the character's gender

It is said that the twin princes share a curse, causing one to be frail and sickly and the other mute and without use of his legs. It is a literal curse put on them and it certainly doesn't stop you from getting killed.

MASSIVE SPOILERS
There are 4 endings actually
1. You keep the cycle of the flame from going back to normal, which means more will come in your place and do what you did for nothing.
2. You reset the cycle, and darkness comes leading to an age of dark and later on an age of light yet again.
3. You end the cycle fully, leading to eternal darkness.
4. You become a god among men, taking the flame for yourself and leading to an age of hollows.
