Dogs are present in town environments and can be accidentally killed. One is also shown deceased during a mission but it occurs before the player arrives.
Nothing resembling modern police. Of note however, is that in real life, the Medjay were used as a sort of police force by pharaohs of the New Kingdom, and Bayek's role in game as a Medjay is sort of like a wandering sheriff, but again, it's very far removed from what one might consider as police in the modern day, and he drops this role by the end of the game.
If Bayek stays long enough underwater without coming up for air, you can hear him struggle to breathe. If you do not return to the surface in time, he will begin to take damage and will eventually drown.
Several missions in the game require the hunting of game animals and birds. Equipment upgrades require skins of hyena, gazelles, crocodiles, leopards, lions, and hippo among others, but these can also be purchased from vendors to minimize hunting. Several battles also involve the killing of trained war elephants.
Pretty Much All Animals Can die.

Crocodiles,Hippoes, Deer, Goats,Ox can be seen in certain places as well as hunter and fishermen hut areas.
Mounts can die accidentally or by you.

Mummified cats are frequently found, including a novelty weapon of one that the player can purchase. Cats are also present in town environments and can be accidentally killed.
When you go after the Crocodile (of the order)
You meet one of your Allies Daughter.
Who later gets kidnapped and drowned.
You don't see the actual drowning.
But Bayek has too personally swim down and bring up her body. So you do see her body tied to a rope.
It's a very horrible heart breaking scene.
Bayek and Aya do eventually die, but we don't see it happen. They lived in ancient times, and their mummies are found and linked to the modern day storyline. One of the assassination targets is a dad, and a big emphasis is drawn to the aftermath of his killing and how his children are affected by it.
The Curse of the Pharaohs DLC has Bayek travelling to the Egyptian afterlife to defeat the spirits of various pharaohs, who have had their rest disturbed and are wrecking havoc on the living world.

Cleopatra and Ptolemy XIII appear in this game, and they had an incestuous relationship in real life before Ptolemy banished Cleopatra and established the beginning of the Alexandrian Civil War. It is touched upon in the game, but the focus is more on the war itself.
There is a couple of sex scenes between Bayek and Aya. A brothel with erotic frescos on the wall is tied to a side quest, and there is a particular building in Alexandria that can be climbed and you can hear sexual moans coming from inside it.
