DAEMONVISION
Zombified/mutant animals are killed to progress through the game. This includes an octopus, strange maggot-like creatures, rats, and bats.

There's a handful of "zombie" animals - technically they're mutants but y'know, they are pretty much zombies and end up getting killed by you (out of self defense).

Not really, at least not in the formal or institutional sense.
But the enemies can knock you down or grab onto you, which could bring this to mind
Also, 3/4 of the bosses will grab one or both of the player characters. The characters in question show some level of distress and annoyance.

Three of the four bosses end up getting set on fire. One of the bosses sets the roof of the manor on fire and ends up setting himself on fire, not that he seems to care. Another boss is also set on fire by the protagonists and explodes because of it.

Many of the creatures are missing eyes, or have eyes that look pretty decomposed.

(Minor spoilers)
One of the bosses is killed when its own weapon severs its spinal cord. The head itself doesn't come off but this is shown to kill its perpetual red glow fades to nothing and it spasms. It is sudden and one of the more disturbing scenes in game

No, but (spoiler alert for 4) Ryan's dead brother James is mentioned often. It is clear both main characters do miss him and are still recovering from the loss

Debatable. The AMS is presumably a government organization and its members are the protags. The full nature of the actual organization isn't ever revealed but the protags are all meant to be seen in a positive light. But they aren't cops per se

Specifics aren't given, but one of the bosses is very erratic and sadistic with mannerisms (excessive laughing and repetitive speech patterns) that imply he's not sane.
Granted the undead creatures in this game are hardwired to want to kill and devour humans, and sapient bosses are rare and not an exception to these urges. In the franchise it is hard to determine if any of the bosses are mentally ill or just acting the way their instincts tell them to. That being said, Hangedman matches the archetype somewhat

3/4 of the bosses don't wear anything and the one that does is stripped of its armor. No bits are shown though. And one is an octopus.
A lot of enemies are also shirtless and like 2-3 types are nude. Once again no bits

Well, was. Thornheart, the antagonist, claims to have been "reborn" from a fatal disease. Presumably he either miraculously recovered or experimented on himself to save his own life. He now looks sickly and walks with a limp but how his health is now is not revealed.

Two different helicopters are taken out, both empty when they explode.
The first is in the first chapter, where the player characters attempt to escape via helicopter but must jump from it when the creatures drag it down. The second is thrown by one of the bosses to prevent the player characters from escaping.

Motorcycle. Our two protags ride it into the manor and jump off, sending it into a crowd of zombie enemies with the players having to shoot it to trigger an explosion

Any gore is somewhat censored through having them just sort of burst into light, but the zombie designs are decomposed. The last boss also lacks any skin, and another boss is decapitated/has his spine severed on screen.
